Artificial Intelligence in Innovation
Artificial Intelligence (AI) as a game-changing technology has the potential to revolutionize industries including that of food ingredients. One area where AI has shown to be a powerful tool is innovation. By leveraging AI’s immense processing power and predictive analytics capabilities businesses will leverage their innovation processes to the next level in efficiency and efficacy. The innovation process from discovery to scale up phase is expected to speed up drastically selecting certain potential strains or cultures for alternative dairy products. Using AI to generate local product concepts based on real-time taste trends can outperform the use of consumer panels worldwide. Speeding up recipe formulation development making products healthier still with full of flavor is expected to be another benefit of using AI in innovation in food. During this dinner meeting IFFI members share insights and experiences about the use and impact of artificial intelligence in innovation.
